Description: A very traditional Chianti Classico made of  Sangiovese  and Canaiolo. 

Fermentation is done in stainless steel vats with frequent délestages.  The wine rests in French oak for 12 months, then is bottled.

Lively cherry ruby color with black reflections and cherry rim.   The bouquet brings forth dusky berry fruit supported by clean vegetal spice and tart accents. On the palate it's bright, with lively cherry fruit supported by clean sour cherry acidity and tannins that flow into a warm clean berry fruit finish. 

Pleasant, drinks nicely with succulent grilled meats, including sausages or ribs, and also has the acidity necessary to stand up to fried meats and vegetables
 


CHIANTI CLASSICO RISERVA

: Chianti Classico DOCG, Italy

Description
: A very traditional Chianti Classico made of Sangiovese, Colorino  and Canaiolo. 

Fermentation is done in stainless steel vats with frequent délestages.  The wine rests in French oak for over 24 months, then is bottled.

In the glass, the color is a very bright ruby red.  A scent of violets, mature red fruit and spices.   The taste is dry with cherries and spices, full bodied with soft tannins and a very well balanced acidity.   Serving suggestion:  pastas with traditional meat sauces, grilled meats, seasoned cheeses.

 
 
   
Fattoria di Corsignano

Fattoria di Corsignano is located in Vagliagli just 5 miles outside of Siena, Tuscany and is probably the smallest traditional artisanal producers in Chianti Classico.

Mario and Elena Bartoli make Chianti Classico in the traditional way which for them means no international varieties (aka no Merlot, Cabernet Sauvignon,  etc. etc.) and no use of clones, just what the French call sélection massale of the traditional grape varieties allowed today Sangiovese, Colorino, Canaiolo.    

Their respect of tradition is so strong that the winery continues to make a Rosso Toscano from the grapes of the old chianti classico - malvasia nera and bianca.   This blend of varietals became illegal as 'Chianti' in the 2005 as the new wine makers were determined to have a Chianti blend that was easier to manage.
 
The soil is a mix of galestro and alberese that gives the chianti classico the unmistakable intense violet nose.   Oak aging is done in French casks of 10HL (about  265G) and some barriques too.  

The total aging is of about one year for their Chianti Classico and two for the Riserva; the total production is of 40 thousands bottle from the 22 acres of vines (average 30 years old).
